Pectin Print

Pectin is a natural hydrocolloid derived from fruit peel.

The space between the cell walls in plants is rich in pectin. Commercially interesting raw material for pectin production are apple pomace and citrus peel. Although other plants like sugar beets, banana peel and mango peel are researched as a source for pectin all material is made from these two fruits.

Natural pectin has a high degree of esterification, but derivation leads to types with low degree of esterification or pectin with amide groups via substitution. This leads to variation in functional properties of pectin like gelling temperature, protein reactivity and viscosity.
