    Air Dried Fruits, Vegetables and Spices

    Air dried fruits, vegetables and spices have been dried to extend their shelf life. The product quality is guaranteed by using the best raw materials and best possible drying equipment. Dehydration of the products is done in a very careful way, by means of close temperature and air flow monitoring. Because of this close monitoring process the nutritional and organoleptic degradation during the drying proces is minimized.

    Once dehydrated, the products are transferred to the dry processing area, where they undergo different operations such as size sorting (sorted by differences of up to a tenth of a millimetre), sorting by density, colour selection (advanced artificial vision techniques), size reduction, grinding (up to maximum levels), packaging and palletisation.

    Dietary fibre is the indigestible portion of food derived from plants

    There are two main types

    • Soluble fibre dissolves in water. It is readily fermented in the colon into gases and physiologically active byproducts, and can be prebiotic and/or viscous. Soluble fibres tend to slow the movement of food through the system.

    • Insoluble fibre does not dissolve in water. It can be metabolically inert and provide bulking, or it can be prebiotic and metabolically ferment in the large intestine. Bulking fibres absorb water as they move through the digestive system. Insoluble fibres tend to accelerate the movement of food through the system.

    Freeze Dried Fruits and Vegetables

    Freezedrying (lyophilisation, or cryodesiccation) is a unique dehydration process to preserve fruits, vegetables and other ingredients. Freezedrying works by freezing the raw material and then reducing the surrounding pressure to allow the frozen water in the material to sublimate directly from the solid phase to the gas phase. Because this is a very gentle process, the taste and nutritional value of the freezedried product are very well preserved. Freezedried products are also very easily re-hydrated because of the very "open" cell structure of the dried product. Freezedried ingredients are used often in breakfast cereals, tea and instant products which need to hydrate fast.

    Viogerm® Wheat Germs

    Wheat germs are the most valuable part of wheat. They are a valuable source of vitamins, minerals, trace elements and unsaturated fat. Besides these nutritional benefits, wheat germs also have an excellent taste profile, with a slightly nutty aftertaste. The high content of unsaturated fatty acids in wheat germs limits their shelf life. Therefore, the wheat germ is removed during flour production. Acatris only uses and sells Viogerm® wheat germs from Swiss producer Hochdorf AG, which have been conserved by a mild treatment to preserve the nutritional value, and at the same time prolong the shelf life to one year.

    Acatris can provide several types of vitamins and minerals, and also tailor-made premixes of these components to specifically suit our customers needs. We know which types of vitamins and minerals are most suitable for different applications. Furthermore; in very specific cases, coated vitamins or minerals can be applied, for example to increase shelf life, to protect sensitive vitamins from severe processing conditions or to prevent unwanted interactions with other ingredients.

    Yoghurt Powders

    Yoghurt powder or dried yoghurt is a manufactured dairy product made by removing moisture from yoghurt until only the dry matter is left. Usually the production process includes an evaporating step followed by spray-drying. One purpose of drying yoghurt is to preserve it; yoghurt powder has a far longer shelf life than liquid yoghurt and does not need to be refrigerated, due to its low moisture content. Another purpose is to reduce its bulk for economy of transportation. Powdered yoghurt can have different fat contents, e.g. dry whole yoghurt or nonfat dry yoghurt, and different pH levels (acidity grade).
