Micro Crystaline Cellulose (MCC) are physically modified cellulose molecules. Via a coprocess with CMC or other thickeners the product can form a stable gel when dispersed. This property is used to stabilize a vaiaty of products like beverages, dairy products, bakery products, dressings and sauces.
