Lecithin is a natural product occurring in the cel membrane. Soy beans are a natural source for lecithin. After extraction from the beans the lecithin can be used as an emulsifier. The phospholipids in lecithin consist of a hydrophilic head of phosphate and an hydrofobic tail of fatty acids.
