Xanthan Print

Xanthan gum is a hydrophylic polysaccharide made via microbiological fermentation of glucose syrup. It is used as a thickener and shows a high stability against heat treatment and low-pH environments. Xanthan has a very characteristic yield stress allowing you to keep small particles floating. It also perfectly pseudoplastic meaning that there is an isntant drop in viscosity when shear is applied above the yield stress. After removing the shear the viscosity recovers instantly.

Certain special types of xanthan provide a clear sollution making them specially suitable as salad dressing stabiliser. Other applications for xanthan are ready meals, bakery products or beverages.
