Fruit Preparation for Yoghurt
Fruit preparations may be incorporated into stirred yoghurt in several ways. When mixed in during production; a high viscosity and creamy texture of the stirred yoghurt requires similar properties of the fruit preparation in order to ensure an equal distribution after mixing.
When the fruit preparation is added to the bottom or top of the stirred or set yoghurt, the fruit preparation has to be mixed through the yoghurt by the consumer, so it is important the fruit preparation can be stirred easily through the yoghurt, but during storage it has to remain stable against for example "colour bleeding".
