    CITREM

    CITREM (E472c, citric acid esters of fatty acids) emulsifier types are produced by esterifying fatty acids with citric acid. They are a highly hydrophilic type of emulsifier, and mainly used as anti-spattering agents for cooking margarines or emulsifiers for the meat industry (pâtés and other meat products). They can also act as a Non-GMO and allergen-free replacement product for lecithin in applications such as chocolate coatings, and in instant milk and whey powders.
