    LACTEM, (E472b, Lactic Acid Esters of Mono- and Diglycerides) is an alpha tending emulsifier often used as a whipping agent in (ice)creams, desserts and cake batters. Typically the LACTEM is produced from vegetable oil like palm oil.

LACTEM improves aeration and foam stability in many different products. Acatris can provide LACTEM in different granulations, and also in sustainable palm-based product types.
