    PGPR

    PGPR (E476) is a liquid emulsifier made from vegetable oil (usually castor or soybean oil) and glycerol. It has the ability to reduce the viscosity in chocolate and provides emulsion stability in low-fat spreads and emulsions. In chocolate it works by decreasing the friction between the particles of cacao, sugar, milk, etc. present so they can flow more easily when melted.
