    Polysorbates (E431-E436) are liquid emulsifiers with a high HLB value, suitable for stabilizing oil-in-water emulsions. Polysorbates are oily liquids derived from PEG-ylated sorbitan (a derivative of sorbitol) esterified with fatty acids. 

    Polysorbates are often used in the following applications:

    - dispersants of flavours and spice oils and palatability improvers in bakery products
    - solubilizers in oil compounds
    - whipping aids and dryness promoters in whipped toppings
    - flavour dispersants in carbonated beverages
    - dryness improvers, whipping aids and flavour dispersants in frozen desserts and ice-creams
    - dispersion enhancers which reduce the total incorporation of fat in dry-mixed soups
    - components of defoaming formulae in the sugar industry
    - inhibitors of oil separation in coffee whiteners and other fat-containing spray-dried foods
