Mono-diglycerides and their esters Print

Mono di-glycerides and their esters are active emulsifiers. It allows two imicable products to become micable. Emulsifiers have a typical confomation with a hydrofobic and a hydrofilic end of the molecule allowing them to interact on the interlayer.

Specific products have been developed to create a series of emulsifiers to accustom the needs for specific emulsifiying properties, suchs as whippability or desperability. These emulsifiers are used in all kind of food applications ranging from sauces, bakery products to ice cream and processed meats.
