Carboxy methylcellulose is a derivative from cellulose with a backbone of cellulose substituted with carboxymethyl groups. CMC acts as a stabilizer in many food applications providing a wide range of viscosities a clean eating profile, freeze /thaw stability and protein stabilization. The raw material is cellulose which is widely available, but for commercial production of most food grade cellulose derivatives only wood pulp is used.
