Carboxy methylcellulose is a derivative from cellulose with a backbone of cellulose substituted with carboxymethyl groups. CMC acts as a stabilizer in many food applications providing a wide range of viscosities a clean eating profile, freeze /thaw stability and protein stabilization. The raw material is cellulose which is widely available, but for commercial production of most food grade cellulose derivatives only wood pulp is used. CMC is available with different degrees of substitution and viscosity ranges
