Guar gum are ground guar seeds.

Guar gum is commonly used in the food industry as a thickener fror a range of food applications suchs as ice cream, soups and sauces and bakery ingredients. Guar provides viscosity and has a high water absorbing capacity.

Guar gum is a polysaccharide consisting of the monomers galactose and mannose like LBG, but in a different ratio. In contrary to LBG, Guar will be completely activated in cold solution.
