As a thickener locust bean gum (LBG), which is made from ground locust bean seeds is widely used in the food industry. The natrual growing area is in the meditaranian. After harvesting the seeds are seperated from the pods and ground. Locust bean gum is a polysacharide consisting of the monomers galactose and manose in a certain ratio.
