Xanthan provides viscosity and is the most pseudoplastic material, meaning the viscosity lowers fast when shear stress is applied, when the stress is removed, recovery of the viscosity is instant. This unique property provides e.g. excellent pumpability and flavour release.

Xanthan is also very stable under a variety of conditions, such as low pH, heating and cooling.
